Ted's Cafe Escondido, known for some of the best Mexican food in Oklahoma, lives by its slogan: "The way Mexican food should be." Though it's tempting to fill up on the starters, remember to save room for Ted's generous entree portions. This monster platter comes piled with one taco served with sour cream and guacamole, one chile relleno and one enchilada served with beans and rice. Another delicious choice is the spinach enchilada plate, which comes with two tortillas stuffed with cheddar jack cheese and spinach that have been sauteed in butter, garlic and lemon. The enchiladas are smothered in sour cream sauce and cheese and served with rice and beans. To close your meal, enjoy the cinnamon sugar goodness of a warm sopapilla alone or drizzle it with honey.
